I'm assuming that man's arm was bitten off by a shark. If so, then it's a pretty clean move on his part to christen his dismembered limb with a likeness of the creature what felled him. Note my intentional strange grammar at the end of that last sentence. I'm not sure if that sort of wording is archaic, incorrect, or both. I'm talking about the usage of 'what' in a context where one would normally use 'that'.
